Mascarpone Oreo Cookies

I found this recipe from one of my favorite blogs Kevin and Amanda and just had to try it! I was a little concerned at first, because I honestly hadn’t ever heard of mascarpone before, and how silly did I feel when I had indeed already eaten this mysterious ingredient in tiramisu!!  Well, I was able to find this mascarpone at our local commissary which in itself was a HUGE deal because our commissary is totally not that great, but it is was it is, and the fact that we have one is good enough for me! Ok, back to the food! Since I was able to find the key ingredient it was time for the cooking experiment!

This is what you need:

1 cup butter ( I know, it’s a lot of butter)
3 oz. mascarpone cheese (3 oz. equals 3/8ths of a cup, I googled it)
1 cup sugar
1 egg yolk
2.5 cups flour
1 tsp. vanilla
5-7 crushed Oreo cookies (use 7.. so worth it)

Then you are going to cream the butter and the mascarpone together, add the sugar, after its nice and fluffy add in the egg yolk and vanilla!  I like to make sure the egg is nice and mixed in before adding the flour- once the flour is added, if you don’t have a kitchen aid (which I don’t.. hint hint hubby of mine) its going to get very thick so your little hand held beater is going to get a nice work out!  Next fold the crushed Oreos into the thickness!

After it is completely mixed go ahead and plop those bad boys onto a cookie sheet- I prefer using parchment paper on top of my cookie sheets because it makes for such an easy clean up (we are going for less dishes here people!)

Bake at 325* for 12-15 minutes and then cool them on a cookie sheet… and as my 2 1/2 year old would say…

  2. Theresa - Mascarpone is an italian dessert cheese. It's most known for being the main ingredient in Tiramisu and is also used in cheesecake.
